Banana Blueberry Wonders

So last night I went a little crazy in the kitchen. I had four bananas hanging out in the fridge just dying to be made into something delicious. I had a small amount of blueberries that needed a home too, and soon as they were close to becoming bad. I also had chicken to make into a delicious chicken salad and other fruit that was dying to be in a smoothie (but I’ll save those for another post) :)

I have become obsessed with foodgawker.com, and upon many of the delicious things posted on there, I came across “Honeyed Banana-Blueberry Bread” (http://www.cookbookarchaeology.com/?p=1426). It’s like these people read my mind. Blueberries are an all-time favorite for me, I love blueberries in everything, even my coffee! (blueberry flavored coffee, that is) And banana bread is just so delicious and healthy for you, I just had to give it a try. You should too!

Honeyed Banana-Blueberry Bread

Mixin’s
3/4 c fresh blueberries (You can do frozen, but fresh is always better!)
1 3/4 c whole wheat flour (or AP flour if you don’t have wheat)
2 1/2 tsp baking powder
1/2 tsp salt
1/2 c uncooked quick oats
1/2 c honey
2 large eggs, beaten
1/4 Green yogurt (I used blueberry yogurt!)
1 c mashed ripe bananas (2 to 3 bananas)

Make it
-Preheat your oven to 335 degrees. Grease your bread pan (I used a 9 x 5 pan)
-Sprinkle blueberries with 1 tbsp of flour.

-Mix the rest of flour with baking powder, salt, and oats.
-In another bowl, mix the eggs, honey, yogurt, and bananas

(Doesn’t that raw honey look delicious?!)

-Add liquid mixture to the dry mixture and stir until it is smooth.
-Gently fold the blueberries into the batter. Make sure not to stir them to hard, or they will break!
-Pour the batter into your bread pan and bake for 1 hour or until your toothpick comes out clean from the center.
